Mom's Chili

Anyone need a real delicious and easy chili recipe?
Try this one!
This recipe is courtesy of my Mom, from whom I developed my love of cooking. I wonder what we would be eating if I didn't enjoy cooking...
This chili is so easy, versatile, and delicious, serve over bed of warm rice, with a little sprinkle of cheddar cheese.

Get out the crockpot or large casserole dish and pour in your drained beans. 3 cans of any beans you have on hand.
1 can of pork n' beans1 jar of salsa
1/3 c ketchup
1 t dry mustard1/4-1 t chili pepper(depending on how hot you want it)
1/4 c brown sugar
1 lb ground beef cooked and drained

1 lb ground beef, cooked
1 can pork & beans
1 can kidney beans, drained
1 can black beans, drained
1 can of white beans, drained
1 can lima beans drained
1 can cut green beans, drained
1 15 oz jar of salsa
1/4 c brown sugar
1 t dry mustard

Roasted Shrimp Orzo Salad

I was quickly looking for a shrimp salad recipe and came across this one.

Salt & pepper
Olive oil
3/4 lb orzo cooked
1/2 c fresh lemon juice
2 lb uncooked shrimp, roasted
1 c minced scallions
1 c chopped fresh dill
1 c chopped fresh flat leaf parsley
1 cucumber seeded and diced
1/2 red onion, finely diced
3/4 lb feta cheese, crumbled

Preheat oven to 400. Cook pasta according to package directions. While pasta is cooking whisk together lemon juice, 2 t salt and 1 t pepper, pour in 1/2 c olive oil slowly while whisking so the dressing emulsifies and the oil doesn't float to the top. Pour this over the drained hot pasta.
Place shrimp on a baking sheat, drizzle with olive oil, little salt and pepper. Toss to coat and spread out in single layer, roast for 5-6 minutes or until done. Add shrimp to orzo, along with scallions, dill parsley, cucumber, and onion. Add feta and refrigerate. Serve at room temperature.

New Sandbox!

Last week we finished our built in sandbox, using an existing box that was used for wood storage. Works perfect and its just the right height for kids to stand next to.

Moist Chocolate Cake

Here is the cake I made for Tia's Birthday celebration this past Sunday. I used my sisters chocolate cake recipe and Betty Crocker's pony design, with a throw together cream cheese icing.
This cake is so good and moist its worth trying, here it is:
1 1/2 c sugar
1/2 c vegetable oil
2 eggs
2 c applesauce
2 c flour
1/4 t salt
1/2 c cocoa
2 t baking soda
Sift together the flour and cocoa adding salt and baking soda in a separate bowl. Cream the first 4 ingredients then add the sifted flour mixture. Pour into a greased 9x13 pan or 2 9inch round pans. Bake at 350 for 35 min or until toothpick poked into the center comes out clean.

The cream cheese icing...let me see if I can remember what I put in:
8oz cream cheese
1/2 c butter
2-3 c confectionery sugar
1 t vanilla
1/2 c cocoa

Cream together cream cheese and butter until light and smooth then add 2 c sugar and cocoa as well as vanilla. Add the last 1 cup of sugar slowly, until desired consistency.

We enjoyed a little party at Grandpa and Grandma's house after church...

Yields 6-8 servings.

Greek Couscous from myrecipes.com

1 1/2 cups water
1 cup uncooked couscous
1/2 teaspoon dried oregano
1 1/2 cups diced plum tomatoes
1 cup diced peeled cucumber
1/3 cup crumbled feta chees
1/4 cup small ripe olives, halved
3 tablespoons diced red onion
1(15 1/2-ounce) can chickpeas (garbanzo beans), drained
1/4 cup water
3 tablespoons lemon juice
1 1/2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
add red wine vinegar to suit your taste

Bring 1 1/2 cups water to a boil in a medium saucepan; stir in couscous and oregano. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Combine couscous, tomatoes, and next 5 ingredients (tomatoes through chickpeas) in a bowl; set aside.

Combine 1/4 cup water and remaining ingredients; stir well with a whisk. Pour dressing over couscous mixture, tossing gently to coat. Serves 4 (1 1/2 c serving size) Excellent side salad or meal!

Tzatziki

1 pint of greek style yogurt (you can use regular plain yogurt)
1 large garlic clove, crushed and finely minced
1 medium cucumber, seeded and shredded
1 T red wine vinegar
1 T extra virgin olive oil
1/4 t salt

If you have a food processor or a blender use it for this recipe, if not, no worries just get out your trusty old bowl and spoon. First prepare your cucumber by slicing it in half length wise and scraping the seeds out with a spoon. Shred it and then take a handful and squeeze out all the juice. You should end up with several clumps of cucumber pulp. In the processor combine all 6 ingredients and blend until smooth and creamy. If doing it by hand, first mix together garlic, prepared cucumber, vinegar and olive oil. To that add your yogurt and salt and mix until well combined. Delicious and refreshing!

Hummus with Tahini

1 16oz can chick peas (drained and rinsed)
1/4 c water
4 T lemon juice
2 T Tahini
2 cloves of garlic crushed (or 1 large clove)
1/2 t salt
2 T olive oil
1/2 t cumin

In a food processor or blender add the rinsed chick peas, 1/8c of water, and the rest of the ingredients. Blend until well combined and smooth, adding remaining water as needed to desired consistency. We enjoy it as a dip with toasted pita chips, fresh veggies, or use it instead of mayo on a sandwich, or as a spread over whole wheat bread for a healthy lunch.

Greek Salad from myrecipes.com

2 cucumbers, chopped
2 lb Roma tomatoes, cut into 1/2inch cubes
1 med red onion, chopped
1 1/3 c coarsley chopped parsley
1 1/3 c drained pitted kalamata olives, halved
1/2 c extra virgin olive oil
1/2 c lemon juice
1 1/2 t dried oregano
1 lb feta cheese, crumbled
salt and ground pepper to taste

In a large bowl, combine first 5 ingredients.
In a small bowl whisk together lemon juice, oregano and olive oil.
Break feta cheese into 1/2 inch chunks and add to cucumber mixture. Add dressing and mix gently adding salt and pepper to your liking.

Whole Wheat Sandwich Bread

This is a recipe my Mom received from a friend, she tried it out a few times...and its the "perfect sandwich bread" beautiful, soft and fluffy. So I thought I would try it out and post it for your enjoyment :o)

3 1/2 c. warm water
1 egg
1 T salt
2 T yeast
2 T dry lecithin
1/3 c oil
1/3 c honey
about 11c whole wheat flour

1 T salt and 2 T dry lecithin
2T dry yeast
1 egg
1/3 c vegetable oil and of course 1/3 c honey & 3 1/2 c water
Start by dissolving the yeast in the 3 1/2 c warm water, using a kitchen aid mixer
add in the eggthen add 1T salt, 2 T dry lecithin, continue to mix on low1/3 c oil1/3 c honey(use the same measuring cup you used for oil, the honey will come out much easier)Now its time for the flour, I used about 11 cups for the entire recipe
This is after about 6-7 cups of flower...still quite wet and sticky. But time to switch to the dough hook. After about 10 cups of flour the dough began to come away from the sides of the bowl (this is exactly what you want to happen) however, the mixer was starting to have trouble mixing such a large quantity so I took it out and started kneading it by hand on the counter...for any of you wanting some exercise try this, its a good workout. If the dough is still sticky add a little bit more flour as you are kneading, the dough should end up soft, elasticky and still tacky, but not sticky.Knead it into an oblong roll
Cut it into 3 even portionsRoll each piece of dough into and uniform oblong loaf and place into greased bread pan, seam side down.We needed rolls for hamburgers that night, so I made rolls out of the third piece of dough, placed in a 9x13 pan.It took about 1 1/2 hours to raise the bread to double in bulk. Preheat oven to 325.Brushed the rolls with some water, (you could also use 1 egg beaten) and sprinkled on some poppy seeds. And here it is after 30 minutes in the oven.Delicious!Take it out of the pan and completely cool it on a wire rack.
I don't know what it is about baking bread but its one of the most rewarding things to do in the kitchen. Don't be intimidated...try it!The crumb is soft and fluffy and its all whole wheat flour, great nutrition! Obviously there is no preservatives in this bread so if you are not going to eat it that day slice it up and put it in the freezer after it is completely cooled. I sliced up all the bread and put it in the freezer. I'll take out slices as I need them.Enjoy!
